Chocolate Pots de Créme with CBD & Beta-Caryophyllene

  • 6 small heatproof cups or ramekins
  • 2 medium bowls
  • 1 small saucepan
  • Fine mesh strainer
  • Whisk

Ingredients

  

Chocolate Créme

  • 1 ¼ cup heavy cream
  • 3/4 cup coconut cream
  • 1/2 teaspoon pure vanilla extract*
  • 3 large egg yolks
  • 5 tablespoons maple syrup (1)
  • 1 ½ teaspoon instant coffee
  • teaspoon fine sea salt (2)
  • 6 ounces (2 chocolate bars) bittersweet chocolate (65-70% cacao) – chopped
  • 1-6 scoop(s) Water-Soluble CBD Powder (3)
  • 2 drops Beta-Caryophyllene Terpene (4)
  • *For a richer flavor, substitute vanilla extract with vanilla paste ★ 

Topping Options

  • Whipped cream (store-bought or homemade)
  • Shaved chocolate
  • Chocolate Chips
  • Flavorful extra-virgin olive oil (5) – for drizzling

Homemade Whipped Cream ★ 

  • ½ cup heavy cream – cold
  • 1 teaspoon maple syrup (1)
  • 1 pinch Xanthan gum – optional, to stabilize the cream and help it keep longer

Instructions

 

Chocolate Créme

  • Place chopped chocolate in a medium bowl. For a creamier texture, cover the bowl with a fine-mesh strainer.
  • Heat heavy cream, coconut cream, instant coffee, and vanilla in a small saucepan at medium-low heat. Stir until bubbling around the edges and turn off heat.
  • Whisk the egg yolks, maple syrup, and salt in another medium bowl until combined.
  • Pour the hot cream from the sauce-pan into the yolk mixture slowly, whisking constantly.
  • Add custard mixture to saucepan and cook over medium-low heat, stirring constantly until it’s a thick, heavy cream (about 3-5 minutes).
  • Pour custard mixture into bowl over chopped chocolate (and through strainer if you wish).
  • Wait 1-2 minutes to melt chocolate. Gently whisk to combine.
  • Add Water-Soluble CBD Powder and Beta-Caryophyllene terpene and continue whisking.
  • Pour hot custard into 6 small heatproof containers and cover.
  • Chill until firm, at least 2-4 hours. Keeps for up to 3 days.
  • Serve with optional toppings for additional flavors!

Homemade Whipped Cream ★ 

  • Whip cold cream with 1 maple syrup until soft peaks form. Add Xanthan gum (optional). Keep whipping until stiff peaks.

In his recipe, Carlos uses 1 scoop of CBD powder total (12 mg) for a touch of CBD. Though everyone is different, if your goal is to provide 1 complete dose in each serving, we recommend starting with 1 scoop (12 mg/scoop) per person. See CBD FAQ.

When making CBD desserts, what's the right temperature?

When cooking with CBD, avoid directly contact with high heat. CBD begins to break down between 320-356°F, so we don’t recommend frying or baking unless you’re following a low-temp or dehydration recipe. See CBD FAQ.
